Turkey and Veggie Sloppy Joes
A fun and messy meal that kids love! Lean ground turkey mixed with finely chopped vegetables in a tangy tomato sauce, served on whole wheat buns with a side of carrot sticks.

tomato sauce

Worcestershire sauce

carrot sticks
Instructions
In a large skillet, cook the ground turkey over medium heat until no longer pink, breaking it up with a spatula as it cooks (about 5-7 minutes).
Add the chopped bell peppers and onions to the skillet. Cook for an additional 3-4 minutes until the vegetables start to soften.
Stir in the tomato sauce, tomato paste, Worcestershire sauce, brown sugar, garlic powder, and salt. Mix well to combine all ingredients.
Reduce heat to low and simmer the mixture for about 10 minutes, stirring occasionally, until the sauce thickens and the flavors meld together.
While the turkey mixture is simmering, lightly toast the whole wheat buns if desired.
Divide the turkey and vegetable mixture evenly between the two buns, spooning it onto the bottom halves.
Place the top halves of the buns on the sloppy joe mixture.
Serve each sloppy joe with 1/2 cup of carrot sticks on the side.
