Thai Green Curry with Vegetables and Tofu

Ingredients

vegetable oil

green curry paste

cans coconut milk
2
blocks firm tofu
cubed
2
red bell peppers
sliced
2
zucchinis
sliced
2
cups
green beans
trimmed
2
tablespoons
soy sauce
2
teaspoons
sugar
Juice of 2 limes
Fresh basil leaves
Cooked jasmine rice for serving
Instructions
In a large skillet or wok, heat the vegetable oil over medium heat. Add the green curry paste and fry for 1-2 minutes until fragrant.
Pour in the coconut milk and bring to a simmer.
Add the tofu, bell pepper, zucchini, and green beans to the skillet. Cook for 10-15 minutes, or until the vegetables are tender.
Stir in the soy sauce, sugar, and lime juice. Adjust seasoning to taste.
Garnish with fresh basil leaves and serve over cooked jasmine rice.
