Lentil Sloppy Joes
A vegetarian twist on the classic sloppy joe, made with a savory lentil filling and served on toasted buns.

Ingredients

cup
dried lentils
2
cups
vegetable broth
1
onion | diced
1
bell pepper diced
2
cloves
garlic minced
1
can
15 oz tomato sauce
2
tablespoons
brown sugar
1
tablespoon
mustard
1
tablespoon
chili powder
Salt and pepper to taste
4
hamburger buns
Pickles and coleslaw for serving
Instructions
Rinse the lentils under cold water and drain.
In a large pot, bring the vegetable broth to a boil.
Add the lentils, reduce heat to low, cover and simmer for about 20 minutes or until lentils are tender.
While the lentils are cooking | sauté the onion, bell pepper and garlic in a large skillet over medium heat until softened.
Stir in the tomato sauce | brown sugar | mustard | and chili powder.
Once the lentils are cooked, drain any excess broth and add the lentils to the skillet with the sauce.
Stir to combine and season with salt and pepper to taste.
Let the mixture simmer for about 10 minutes to allow the flavors to meld together.
Spoon the lentil mixture onto the hamburger buns. | Serve the Lentil Sloppy Joes with pickles and coleslaw on the side.
