Instructions
Prepare the Green Beans:
Bring a large pot of salted water to a boil.
Add the green beans and cook for 3-4 minutes until tender-crisp.
Drain and immediately plunge into ice water to stop the cooking process. Drain again and set aside.
Cook the Mushrooms:
In a large skillet, heat olive oil over medium-high heat.
Add the sliced mushrooms and cook for 5-6 minutes until they release their moisture and begin to brown.
Add Garlic and Green Beans:
Add the minced garlic to the skillet and cook for 1 minute until fragrant.
Add the drained green beans to the skillet and toss to combine with the mushrooms and garlic.
Season and Finish:
Reduce the heat to medium and sprinkle the Parmesan cheese over the vegetables.
Toss to coat evenly, allowing the cheese to melt slightly.
Season with salt and pepper to taste.
If using, drizzle with lemon juice and sprinkle with chopped parsley for added flavor and color.
Serve:
Transfer the stir fry to a serving dish and enjoy immediately.
