Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, combine the ground beef, almond flour, egg, 1 tbsp ketchup, chopped onion, minced garlic, thyme, oregano, salt, and black pepper. Mix well with your hands until all ingredients are evenly distributed.
Shape the mixture into a small loaf and place it in a baking dish.
In a separate bowl, toss the chopped mixed vegetables with olive oil, garlic powder, and paprika.
Arrange the vegetables around the meatloaf in the baking dish.
Spread the remaining 1 tbsp of ketchup over the top of the meatloaf.
Bake in the preheated oven for about 35-40 minutes, or until the meatloaf is cooked through (internal temperature reaches 160°F or 71°C) and the vegetables are tender and slightly caramelized.
Remove from the oven and let the meatloaf rest for 5 minutes before slicing.
Serve the meatloaf slices with the roasted vegetables on the side.
