Baked Honey Garlic Chicken Bites
Crispy, bite-sized chicken pieces coated in a sweet and savory honey garlic sauce, served with steamed broccoli and brown rice. A meal that's both nutritious and appealing to kids.

honey

Instructions
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, season the chicken pieces with 1/4 tsp salt and 1/8 tsp black pepper.
Place the cornstarch in a shallow dish. Coat each chicken piece in cornstarch, shaking off excess.
Arrange the coated chicken pieces on the prepared baking sheet, leaving space between each piece.
Drizzle 1 tbsp olive oil over the chicken pieces.
Bake for 15-20 minutes, or until the chicken is golden and cooked through.
While the chicken is baking, prepare the sauce. In a small bowl, whisk together 2 tbsp honey, 2 tbsp soy sauce, and 2 minced garlic cloves.
Steam 1 cup broccoli florets until tender-crisp, about 5 minutes.
When the chicken is done, remove it from the oven and brush the honey garlic sauce over each piece.
Return the chicken to the oven and bake for an additional 5 minutes to caramelize the sauce.
Warm 1/2 cup cooked brown rice.
Serve the baked honey garlic chicken bites with the steamed broccoli and brown rice.
