Zucchini Ribbon Salad with Lemon and Parmesan

Ingredients (serves 4): 

  • 4 large zucchinis
  • 2 lemons (juice and zest)
  • 4 tablespoons extra-virgin olive oil
  • 1/2 cup shaved Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves (optional, for garnish)

Instructions:

  1. Using a vegetable peeler or mandoline, slice the zucchinis lengthwise into thin ribbons.
  2. In a bowl, whisk together lemon juice, zest, and olive oil. Season with salt and pepper.
  3. Add zucchini ribbons to the dressing. Toss gently to coat.
