- Juice of 1 lemon
- Salt and pepper to taste
Instructions:
- Prepare the Chicken: In a bowl, mix honey, hot sauce, soy sauce, and garlic. Season chicken thighs with salt and pepper, then coat them in the marinade. Let sit for at least 15 minutes.
- Cook Quinoa: Rinse quinoa under cold water. In a pot, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until tender. Fluff with a fork and let cool.
- Cook Chicken: Preheat a grill pan or skillet over medium heat. Add chicken thighs and cook for about 6-7 minutes each side, or until thoroughly cooked.
- Prepare Salad: Combine cooled quinoa, cucumber, red onion, cherry tomatoes, parsley, olive oil, and lemon juice in a large bowl. Season with salt and pepper to taste.
- Serve: Place a serving of quinoa salad on a plate and top with cooked chicken thighs.
